Ingredients
80g extra bitter (70%) chocolate chips
2 eggs
3 egg yolks
Pinch of salt
100g granulated sugar
50g ground almonds
250g cream
15g flour
300g fruit of ripe mangoes (cut coarsely)
Preparation
Melt the chocolate in a bain-marie.
Beat the eggs and egg yolks together with the salt, sugar, powdered almonds and the cream.
Add the melted chocolate and mix carefully, then beat the sieved flour into the mixture.
Divide the mango into aluminium baking dishes and pour the mixture on top.
Cook in the oven for 10 minutes at 200°C.
