The mini vol au vents are made from puff pastry to the French method, and are suitable for either hot or cold fillings. For optimum results with cold fillings, they should be refreshed in an oven for 5 minutes at 160oC then allowed to cool before filling.
The Mini Crispy Corolles and Iris are made with foncage dough, and are suitable for either hot or cold fillings. They do not have to be reheated before use.
