For 4 individual portions
Ingredients
125ml milk
125ml cream
75g white chocolate chips
4 egg yolks
40g granulated sugar
Candy sugar for finishing
Preparation:
Boil the milk and the cream and take off the heat.
Melt the white chocolate chips in the milk.
Beat the egg yolks with the sugar.
Pour the milk onto the egg mixture and mix thoroughly.
Fill individual oven-proof dishes 4/5ths full with the mixture and cook in a bain-marie in the oven for approximately 30-35 minutes at 150°C.
When finished, set aside and allow them to cool. Sprinkle Candy Sugar over the cooled crèmes
Before serving, caramelise the sugar with a gas burner or under the grill.
