Coffee and Walnut Cake

Ingredients for cake:

Ingredients for butter cream topping:

  • 125g unsalted butter
  • 200g icing sugar
  • 50ml espresso coffee
  • 12 walnut halves ( for decoration)

Method:

1. Preheat the oven to 180℃.

2. Beat the butter and sugar together in a bowl until very light and pale. Add the eggs to the mixture one at a time, beating well to completely incorporate each egg before adding the next.

3. Add the espresso to the mixture stirring well, then add the flour and walnut pieces and stir well to completely combine.

4. Spoon the cake mixture into two lined and greased 20cm/8inch cake tins.

5. Transfer to the oven and bake for 25-30 minutes, or until a skewer inserted into the centre of the cake comes out clean. When cooked, remove from the oven and leave to cool on a wire rack.

6. For the buttercream topping, beat the butter and icing sugar together in a small bowl until pale and light. Add the espresso and mix well.

7. Spread the buttercream over the top of each cake, and place one cake layer on top of the other.

8. Decorate the cake with the walnut halves and serve.
