    I'm new to using duck fat for cooking. Having been disappointed with commercial brand roast potatoes and the like and being fond of confit de canard, I decided to branch out and try it myself. I've yet to try and cook a confit, but so far my roast potatoes and parsnips are truly wonderful. The fat doesn't seem to lose its efficacy after several uses, and at a price of a reasonable olive oil, is very good value.
