Rosé is growing in popularity every year. The colour is derived from crushing red grapes and fermenting on the skins to extract colour before racking off juice and continuing fermentation as for a White wine. The short period on the skins produces only a pink colour. Modern Rosés are erring towards paler ‘Vin Gris’ styles. The most popular Rosés have a touch of sweetness as in the well-known Zinfandel Rose wines from the USA.
